Marry the concept of sandwich (known here as a tramezzino) with pizza and you have a trapizzino, a hollowed out corner of pizza bianca stuffed with traditional Roman tastes: braised oxtail, chicken alla cacciatore, “picchiapò” (sautéed and spiced boiled meat), tongue with green sauce. The trapizzino was the brainchild of chefs Stefano Calegari and Gabriele Gatti and it’s turned their tiny Testaccio pizzaria 00100 into one of the hottest takeaway food spots in town. The pizza, with flavours like the Greenwich (mozzarella, Stilton and port reduction) and mashed chickpeas with rosemary, is pretty good as well.

  1. Yum, that looks delicious! I’ve never heard of such a thing, and I doubt they have it at my local pizzeria, but I’ll definitely keep my eyes peeled for one when I’m hunting for food.
